I cannot believe that we are approaching Labour Day weekend. It is time to start thinking of food for the fall and the back to school crowd.
Old Fashioned Raisin Spice Cake is a moist, spicy everyday cake…good for dessert, lunchboxes, after school. What a combination of spices…cinnamon, allspice, cloves! The addition of the whipped egg whites adds an airy feeling to this cake.
Enjoy it on it’s own or with a scoop of vanilla ice cream.

Ingredients
Cake
- 2 egg whites
- 1 1/3 Cups all purpose flour
- 1 1/2 Tsp baking powder
- 1/2 Tsp salt
- 2 Tsp cinnamon
- 1 Tsp ground allspice
- 1/2 Tsp ground cloves
- 1/2 cup butter (softened to room temperature)
- 1 cup white sugar
- 2 egg yolks
- 2/3 cups milk
- 1 Tsp vanilla extract
- 3/4 cups raisins (which have been soaked in hot water for 5 minutes and then drained)
Frosting
- 1/4 cup butter (softened to room temperature)
- 2 Cups icing sugar
- 1 Tbsp lemon juice
- 1 - 2 Tbsp milk
