Mexican Style Cheese Dip

I am always on the lookout for a new dip or spread to bring to potlucks or to prepare in a hurry when company arrives.

This recipe fits the bill.  It is a snap to make and only requires 1 minute in the microwave to do the cooking.

Mexican Style Cheese Dip uses a combination of salsa, cream cheese, Tex Mex shreds and kalamata olives to create a wonderful spread or dip for crackers.  It is also very nice when served with celery sticks or cucumber slices.

Mexican Style Cheese Dip

Serves 8 - 10

Ingredients

  • 1 8 oz (250 gm) pkg cream cheese
  • medium heat salsa to cover (about 1/4 to 1/3 cup)
  • cheddar or tex mex shreds to cover (about 1/4 cup)
  • 2 - 3 Tbsp sliced pitted Kalamata olives

Optional

  • 1 Tbsp fresh chopped parsley

Directions

Cut cream cheese into about 1 inch cubes and place over the bottom of 9" Pyrex pie plate or other microwave safe dish.
Mexican Style Cheese Dip
Top with salsa, shredded cheese and olives. Sprinkle with parsley, if desired.
Mexican Style Cheese Dip
Microwave on high 45 seconds to 1 minute or until cheese is melted. Serve with your favourite crackers. It is also nice with cucumber slices or celery sticks.
