Salt and Pepper Watermelon

Ontario watermelons are now available in the local grocery stores and the Farmer’s Market.  The taste of watermelon, brings back the memories of summers long past….family picnics, watermelon seed spitting contests, a nice ending to a summer barbecue.

My first experience with a savory watermelon dish, was the combination of watermelon, radish and feta cheese (see the post Watermelon and Radish Salad – A Dynamic Duo).

Salt and Pepper Watermelon is a fresh and tasty appetizer, that hooks you with the first bite.  The contrasting flavours of the sweetness of the fruit, the salt, the hotness of the pepper are balanced by the white balsamic vinegar.

I used a white peach balsamic when I made this dish.

Salt and Pepper Watermelon

Serves 4 - 6

Ingredients

  • 1/2 seedless watermelon (cut into large cubes)
  • generous sprinkle of salt
  • good grinding of pepper
  • splash or two of best olive oil
  • splash of white balsamic vinegar

Directions

Slice the watermelon in half and then cut the half into two quarters. Slice and one and a half inch slice off the quarter and cut off the rind and cut the watermelon into cubes.
Salt and Pepper Watermelon
Gently toss the watermelon with the olive oil, balsamic vinegar and lots of salt and pepper. Serve with cocktail toothpicks.
