Barbecued Rack of Pork with Sauerkraut

 

A very simple but delicious recipe, Barbecued Rack of Pork with Sauerkraut is seasoned with your favourite rib seasoning.

This is such a nice dish, because all you need is a side vegetable and a simple salad for a complete meal.

Barbecued Rack of Pork with Sauerkraut

Serves 6

Ingredients

  • 6 ribs rack of pork
  • 1 1/2 Cups your favourite sauerkraut
  • your favourite rib seasoning ((I like the Keg's Chicken and Rib seasoning)

Directions

Cut two layer of tin foil that are triple the size of your rack. Place the rack of pork in the middle of the tin foil. Tuck the sauerkraut under the ribs and wrap one layer of tin foil over the ribs. Turn the second piece of tin foil in the other direction and wrap the ribs in that direction.
Preheat the barbecue to medium-high. Leave the back burner off and place the pork package on the back burner. Close the lid and barbecue for about 20 minutes per pound or until the pork is cooked through, but still a little bit pink.
