Grilled Honey Lemon Lamb Chops

Grilled Lemon Honey Lamb Chops can be marinated the night before. 

The next evening, while you are grilling the lamb chops, prepare Spinach Salad and either Zucchini Tomato Pepper Stir Fry or Asiago Brussel Sprouts.

A sophisticated meal, ready in less than 30 minutes!

Grilled Lemon Honey Lamb Chops

Ingredients

  • 3 Tbsp liquid honey
  • 2 Tsp freshly grated lemon rind
  • 3 Tbsp lemon juice
  • 3 Tbsp olive oil
  • 1 Tsp dried thyme (or 1 tbsp chopped fresh thyme)
  • 2 Tsp Dijon or your favourite good mustard
  • 1 clove garlic (chopped)
  • 1/4 Tsp salt
  • 1/4 Tsp grated pepper
  • 12 lamb loin chops

Directions

In a large bowl, whisk together honey, lemon rind and juice, oil, thyme, mustard, garlic, salt and pepper. Add the chops to the bowl, turning to coat; let stand for at least 30 minutes or cover and refrigerate overnight.

Preheat the grill to medium-high. Place the chops on the grill and sear both sides. Reduce the heat to medium and cover the grill. Grill for about 15 minutes, turning every 5 minutes.
