Mom's Favourite Meat Loaf

In the 1950’s, diners all seemed to have Mom’s Meat Loaf on the menu.  It was considered the penultimate comfort food.  Things have not changed.  This is my favourite meat loaf and a comfortable meal it made.

A very moist meat dish, Mom’s Favourite Meat Loaf has a topping of a chili sauce & mustard mixture for added zest.

Serve it with fried or mashed potatoes, a green salad  and  Grilled Marinated Mushrooms and you will not be disappointed.

Mom’s Favourite Meat Loaf

Serves 6

Ingredients

  • 680 Gm (1 1/2 lb) lean ground beef
  • 2 Large eggs (beaten)
  • 3/4 cups milk
  • 2/3 cups Panko bread crumbs (or fine dry bread crumbs)
  • 2 Tbsp finely chopped onion (about 1 small onion)
  • 1 Tsp salt
  • 1/4 Tsp chili powder
  • freshly ground pepper

Topping

  • 1 Tbsp prepared mustard
  • 1/2 cup chili sauce

Directions

Mix the ground beef, eggs, milk, bread crumbs, onion, salt, pepper and chili pepper together. Pat mixture into and 8 ¾ x 3 in. round baking dish (1.5 L or 1 1/2 quart)

Bake in 350 °F oven for 60 minutes. Drain off excess fat.

Remove from the oven. Mix the mustard and chili sauce and spread over the top.

Return to the oven for 10 more minutes. Cut into wedges to serve.
