Chicken Parmesan

Chicken Parmesan is an Italian dish made with shallow fried breaded chicken breast which is then layered with Italian cheeses and tomatoes and baked.

Suitable for any season, I love to make this in the cold weather, when I am reluctant to be barbecuing. 

Serve it with a green salad and fresh pasta or fried potatoes.

Chicken Parmesan

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup Italian bread crumbs
  • 1/2 cup plain bread crumbs
  • 3 Tbsp freshly grated Parmesan cheese
  • 3 Large eggs (beaten)
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 14 oz (398 ml) tin unsalted diced tomatoes
  • 1/2 Tsp dried oregano
  • 2/3 cups grated Italian cheese
  • 1/4 cup freshly grated Parmesan cheese

Directions

Mix the two kinds of bread crumbs (use either all plain or all Italian if that is all you have) with the 3 tbsp of Parmesan cheese in a shallow dish. Set aside.

Place the eggs in another shallow dish and beat well. Set aside.
Chicken Parmesan - beaten eggs
Dip the chicken pieces in the eggs and then in the crumb mixture. Shake off the excess crumbs.
Chicken Parmesan - ready to fry
Heat the oil and butter. Fry the chicken until golden brown.
Chicken Parmesan - fry the chicken
Place the pieces in a glass baking dish and spread the diced tomatoes over all. Sprinkle with the oregano. Then top with the grated Italian (or just Mozzarella) cheese and then with the 1/4 cup of Parmesan cheese.
Chicken Parmesan - ready to bake
Cover loosely with foil and bake at 350 deg F for 50 minutes. Uncover the dish for the last 10 minutes.
