Cucumber Salad

The cold weather is setting in and our fresh from the market lettuces are being replaced by imported or greenhouse ones.  The prices have skyrocketed.

This week, English Cucumbers were a great price.  Cucumber Salad is a crunchy fresh salad which is dressed with a basic oil and vinegar dressing. 

Like it’s cousin Creamy Cucumber Salad, this salad needs to sit for about 20 minutes before serving for the flavours to mix.

Cucumber Salad

Serves 4

Ingredients

  • 1 English cucumber (or 2 regular cucumbers)
  • 1/2 - 1 Tbsp freshly chopped chives
  • 4 Tbsp olive oil
  • 2 Tbsp white wine vinegar
  • pinch of sugar
  • 1/4 Tsp salt
  • freshly ground pepper

Directions

Peel the English cucumber and slice into 1/4 inch thick slices. If you are using regular cucumbers, you will need to cut the cucumber along it's length and remove the seeds, before cutting into 1/4 inch thick half moon pieces.

Place the cucumber in a small salad bowl. Cut the fresh chives over top.
Cucumber Salad - add the chives
Whisk together the olive oil, vinegar, sugar, salt and pepper. Pour over the cucumber and lightly toss thoroughly. Let the ingredients meld for 20 minutes before serving.
