Cucumber Salad

The nice thing about cucumbers is that they are available all year round, but cukes fresh from the market make a Creamy Cucumber Salad extra-special at this time of year.

Regular cucumbers that are available in the winter are usually waxed and may have very large seeds.  This fresh cucumber that I purchased at the market had immature seeds, that were quite edible.  Another option is the English cucumber, which is usually shrink wrapped in plastic. They are virtually seedless and quite sweet, but a lot pricier.

This Creamy Cucumber Salad was a popular salad in my family when I was growing up.  The lettuce variety and availability that we have today, did not exist.  Creamy Cucumber Salad and Celery Salad (see an earlier post) were nice alternatives.

Creamy Cucumber Salad

Serves 4 - 6

Ingredients

  • 2 medium to large fresh regular cucumbers (may also substitute with English cucumbers)
  • 1/4 cup Miracle Whip or other kind of mayonnaise
  • 1 Tbsp white wine vinegar
  • 1/4 Tsp salt
  • freshly ground pepper

Directions

Peel the cucumber.

Slice the cucumber in half lengthwise. Cut out any large seeds. Slice the cucumber halves into 1/4 inch pieces.

Mix the mayo, salt, vinegar and pepper together. Thoroughly mix with the cucumber. Let rest at least 20 minutes before serving to let the flavours mix.
