Fried Green Tomato Salad is a combination of red ripe tomato slices placed on panko crusted fried green tomato slices and topped with greens that have been dressed in a spicy lemon vinaigrette.
There is so much in this recipe to rave about. The best of the harvest of tomatoes shares space with fresh basil and greens.
It is a lovely starter for an elegant dinner or a nice side dish for everyday dining.

Ingredients
- 3 Large green tomatoes
- 3 Large ripe red tomatoes
- 1/4 cup all purpose flour
- 1/4 Tsp salt
- 1 Large egg
- 1 cup panko bread crumbs
- 1 Tbsp brown sugar
- 1/4 cup olive oil
- 3 Cups packed spring mix or mixed baby greens
- 1/2 cup chopped fresh basil
Dressing
- 3 Tbsp olive oil
- 1 1/2 Tbsp lemon juice
- 1/2 Tsp Tabasco or other hot sauce
- 3/4 Tsp brown sugar
- 1/8 Tsp salt
- freshly ground pepper
Directions

Whisk together the olive oil, lemon juice, hot sauce, brown sugar, salt and pepper. Set aside. |
Salad

Slice the ends off the tomatoes. Cut each tomato into 3 slices, 1/2 inch thick. Set the red tomato slices aside on a plate. |

Stir the flour with the 1/4 tsp of salt in a shallow dish. Season with pepper. Whisk the egg in another shallow dish. Stir the panko with 1 tbsp of brown sugar in a third shallow dish. |

Dip each slice in flour, then in eggs, then in panko mix. Lay on a plate. |

Heat a large frying pan over medium-high heat. Add the 1/4 cup of olive oil. When the oil is hot add the panko crusted green tomato slices. Fry until golden brown, 1 to 2 minutes per side. Transfer to a paper towel lined plate. You made need to add a dash more olive oil if the pan gets too dry. |

Toss the mixed greens and basil with the dressing. Stack a fried green tomato, then a red tomato slice on a plate. top with salad greens. Serve immediately. |
