Cheese and Bacon Toastie

My father was a slender man, with a huge appetite.  So, on Friday and Saturday evenings, when they were up a little later, my mom would make a fourth meal (snack) around midnight.  One of her favourites was a Cheese and Bacon Toastie.

I know that in places such as England, a Cheese Toastie is another name for a grilled cheese sandwich, but to our family it was an open faced sandwich, grilled under the broiler.

A Cheese and Bacon Toastie is comprised of lightly toasted bread, which is covered with cheddar cheese, diced tomatoes and partially cooked bacon. It is put under the broiler until the cheese melts and the bacon crisps.

Today, I do not eat a fourth meal at midnight, but enjoy a Cheese and Bacon Toastie for breakfast or lunch.

Cheese and Bacon Toastie

Serves 4

Ingredients

  • 4 Large slices french bread, cut thick and lightly toasted (or substitute with your favourite bread)
  • 4 Slices of lean bacon (fried until starting to cook, but not crisp)
  • 1/3 - 1/2 cup grated old cheddar
  • 1 tomato (finely chopped)

Directions

Lightly toast the bread. Top it with grated old cheddar.

To this add the diced tomato.

The add the lightly cooked bacon, which has been cut into bite sized pieces. Place on a cookie sheet which has been lined with parchment paper.
Cheese and Bacon Toastie
Set the oven to broil (door slightly ajar) and place the cookie sheet under the broiler. Broil, just until the cheese melts. You have to watch it or it will burn!
