Curried Sweet Potato Soup

Happy Halloween!

There is an all day rain here today. The little children will need rain wear over their costumes when they come out trick or treating this evening.

Curried Sweet Potato Soup is a perfect soup for a rainy fall day.

It is a hearty thick soup that is lightly seasoned with curry and ginger….a perfect soup to serve along with Basil Tomato Parmesan Bread.

Curried Sweet Potato Soup

Ingredients

  • 2 Tsp olive oil
  • 1 Small - medium onion (finely chopped)
  • 1 clove garlic (chopped)
  • 3 Medium to large fresh sweet potatoes (peeled and diced.)
  • 3 - 4 Cups unsalted chicken broth
  • 3/4 Tsp salt
  • 1 Tbsp maple syrup
  • 1 Tbsp chopped parsley
  • 1/2 Tsp ground ginger
  • 1/2 Tsp curry powder

Garnish (Optional)

  • freshly chopped chives

Directions

In a small stock pot, heat the oil over medium heat. Add the onion and garlic and cook until soft and translucent (about 5 minutes)
Add 3 cups of stock, sweet potatoes,maple syrup,salt, parsley, curry and ginger. Bring to a boil and then cover the pot and reduce the heat to simmer. Simmer until potatoes are tender, about 35 minutes.
Curried Sweet Potato Soup - add the vegetables
Transfer the soup in batches to a blender or food processor, purée.
Curried Sweet Potato Soup - puree
Serve with a garnish of freshly chopped chives. If the soup is too thick, thin it with additional stock.
