Apple season has begun and there are so many different ways to use this fresh fruit in sweet and savory dishes.
Apple Cheese Cake is a dessert made with fresh apples which have been baked into a cream cheese mixture, with a shortbread crust.
The recipe calls for a layer of raspberry jam to be spread over the shortbread crust, but we were out of raspberry jam at the cottage. Fortunately, we had some of our Cottage Jam, which is made from wild raspberries and wild blueberries….a wonderful substitute.
I have made this recipe for 20 years. It was given to me by Vicky, who sat beside me at the YMCA, when our kids were taking swimming lessons….thanks Vicky!

Ingredients
Base
- 1/2 cup soft butter
- 1/3 cup white sugar
- 1/4 Tsp vanilla extract
- 1 cup all purpose flour
- 1/4 cup raspberry jam (or your favourite fruit jam)
Cream Cheese Layer
- 1 250 gm (8 oz) pkg plain cream cheese (room temperature (or soften in the microwave - 1 minute at low power should do)
- 1/4 cup white sugar
- 1 Large egg
- 1/2 Tsp vanilla extract
Topping
- 1/3 cup white sugar
- 1/2 Tsp ground cinnamon
- 4 Cups apples (very thinly sliced)
