Apple and Pear Bread Pudding

Evenings have taken on a slight coolness as autumn creeps slowly in.  So our thoughts turn to comfort foods and harvest.

Apple and Pear Bread Pudding is a delicious recipe that contains carmelized apples and pears which have been spiced with cinnamon and nutmeg. 

A hearty, yet elegant sweet ending that will serve eight.

Apple and Pear Bread Pudding

Ingredients

  • 2 Tbsp butter
  • 3 Medium sized or 2 large ripe but firm pears (peeled, cored and cut into 1/4 inch wedges)
  • 2 Large apples (peeled, cored and cut into 1/4 inch wedges)
  • 1/4 cup brown sugar
  • 5 Cups day or two old bakery bread, such as French or Italian (cut into 1/2 to 1 inch cubes)
  • 1/2 cup raisins (soaked in hot or boiling water for 5 minutes)
  • 2 1/4 Cups whipping cream or half and half
  • 3 Large eggs
  • 3/4 cups white sugar
  • 1 Tsp vanilla
  • 1 Tsp ground cinnamon
  • 1/2 Tsp ground nutmeg

Directions

In a large frying pan, melt the butter over medium heat. Add the pears and apples. Cook, gently turning fruit until tender, 8 - 10 minutes. Stir in the brown sugar and increase the heat. Cook for 3 more minutes. Remove from the heat.

Stir in the bread and raisins.

Grease a 9 inch round casserole dish. Add the bread and fruit mixture.
In a separate bowl, mix together the cream, eggs, sugar, vanilla and spices using a whisk or fork. Pour over the bread mixture and stir gently to mix. Let it stand at least 45 minutes to allow the bread to absorb the liquid mixture. You may need to gently push down the bread into the liquid so that all of it is covered.

Bake in a preheated 350 deg F oven for 50 - 60 minutes or until the edges of the bread are starting to brown, the pudding is starting to puff in the centre. A butter knife inserted in the centre should come out clean.

Serve warm or at room temperature with ice cream or whipped cream.
