Ripe bananas and buttermilk are a winning combination. Best Ever Banana Cake is a luscious and moist cake because of that combination.

It takes only a few minutes to prepare, since all the ingredients are added to one bowl and then mixed.

It is a large cake and I like to split the layers in two to make a four layer cake.

Frost with a double recipe of Basic Buttercream Frosting.

Ingredients

  • 2 1/4 Cups all purpose flour
  • 1 2/3 Cups white sugar
  • 1 1/4 Tsp baking powder
  • 1 1/4 Tsp baking soda
  • 1 Tsp salt
  • 2/3 cups shortening
  • 2/3 cups buttermilk
  • 3 Large eggs
  • 1 1/4 Cups mashed ripe bananas (about 3)
  • 1 double recipe of Basic Buttercream Frosting
  • 1 sliced banana for the centre of the cake

Directions

Heat oven to 350 °F . This recipe will make an oblong (13x9x2 inch) or two 9-inch or three 8-inch round layer pans or 30 cup cakes.

If using layer pans, trace the base of the pan on wax paper and line the base of the pan. Then grease the pan base and sides with butter.
Best Ever Banana Cake - prepare the pan
Measure all ingredients into a large mixing bowl. Blend ½ minute on low speed, scraping bowl constantly. Beat 3 minutes at high speed, scraping bowl occasionally.

Pour into pans. Bake oblong 45-50 minutes, layers 35-40 minutes, cupcakes 25-30 minutes or until cake tester comes out clean.

Cool on racks. This recipe makes two large layers.Split the layers in half, to make a four tiered cake.
Prepare a double recipe of Basic Buttercream Frosting.

In between the first two and last two layers, spread a thin layer of icing. In the middle, spread a thin layer of frosting and a bananas sliced very thin.

Frost the top and sides of the cake with the remaining frosting.
