Cherry Oatmeal Squares….remind me of Date Squares, but luscious cherry filling fills the centre instead of the date mixture.

This is an easy recipe to prepare….perfect for a summer picnic.  The just fresh pails of pitted cherries and liquid are available in the grocery for the next couple of weeks.  I divide it into pie, square and cherry sauce size portions and freeze them for enjoyment during the rest of the year.  Usually, I also include Cherry Jam in the list, but we are still working our way through last years!

Cherry Oatmeal Squares

Serves 9 generous servings

Ingredients

  • 2 Cups fresh sour cherries and their juice (can also be made with frozen cherries and juice which have been thawed)
  • 1 Tbsp quick cooking tapioca
  • 1/2 Tsp lemon zest
  • 1 Tbsp white sugar
  • 1/2 cup softened butter
  • 1/2 cup brown sugar
  • 1 cup quick oats
  • 1 cup all purpose flour
  • 1/4 Tsp baking soda
  • 1/4 Tsp salt

Directions

Mix cherries, juice, tapioca and lemon zest. Let stand 15 minutes.
Cherry Oatmeal Squares - the fruit
Cream the butter and sugar. Add the oatmeal and mix with the beater. Measure the flour, salt and baking powder. Add to the butter mixture. Place half of this mixture ina greased 8 x 8 inch glass pan. Scatter cherries, lemon zest and tapioca mixture over the oat mixture. Sprinkle on the tablespoon of white sugar. Top with the remaining oat mixture.
Cherry Oatmeal Squares - before baking
Bake at 350 deg F for 50 - 60 minutes or until the cherries are bubbling and the topping is golden brown. Serve plain or with a dollop of ice cream.
