Christmas Yule Log is the perfect decadent dessert for the Christmas season.
A delicious moist chocolate sponge cake is rolled and fill with whipped cream and decorated to resemble a yule log.
Christmas Yule Log
Ingredients
- 3 Large eggs
- 1 cup all purpose flour
- 1/4 cup cocoa powder
- 1 Tsp baking powder
- 1/4 Tsp salt
- 1 cup white sugar
- 1/3 cup water
- 1 Tsp vanilla extract
- 1 Recipe Chocolate Glaze
Whipped Cream
- 1 1/2 Cups whipping cream
- 1 1/2 Tsp icing sugar
- 1/2 Tsp vanilla extract
Directions

Heat the oven to 375 deg F. Line a jelly roll pan (or rimmed cookie sheet) 15 1/2 x 10 1/2 x 1 inch with waxed paper. Cut the paper to fit the base. Butter the base and sides well. Place the wax paper on the bottom and then butter it. |

Beat the eggs about 5 minutes or until very thick and lemon coloured. |

Stir together the flour, cocoa, baking powder and salt; set aside |

Gradually beat in the white sugar. On low speed, blend in the water and vanilla which have been mixed together. Gradually add the flour mixture, beating just until the batter is smooth. |

Pour into the pan, spreading the batter to the corners. |

Bake 12 to 15 minutes or until a cake tester or wooden toothpick inserted in the centre comes out clean. |

Run a knife along the edges of the pan. Sprinkle icing sugar on a clean cotton tea towel. Invert the cake on the towel. Remove the wax paper. |

While hot, roll the cake and towel from the narrow end. Cool on a wire rack. |

In the meantime whip the cream with beaters that have been chilled in the freezer. When it starts to get stiff, add the sugar and vanilla extract and continue to beat until well mixed and stiff. |

Carefully unroll the cake and remove the towel. Spread the whipped cream over the cake. Roll up and place on a long serving plate. |

Make the chocolate glaze. |
|
Place strips of wax paper under the edges of the cake. Drizzle the chocolate glaze over the cake. Remove the wax paper strips. Decorate with some sugar crystals if desired. |

Chill until the chocolate is set. Carefully cut into 1 inch slices to serve. |
