Cheesy Zucchini

Zucchini  (also known as a courgette in Europe) is available here, all year round.  When shopping for them at the grocery store, look for zucchini that is shiny, firm and small to medium in size.  Zucchini that has a dull look is not as fresh.

Cheesy Zucchini is a quick and delicious way to serve a side vegetable.  Zucchini can be quite bland on it’s own, but the spicy olive oil and the melted Asiago ups the flavour of the zucchini.

Cheesy Zucchini

Serves 4

Ingredients

  • 3 medium zucchini
  • 2 Tbsp Chipolte olive oil (or use regular olive oil and sprinkle with cayenne pepper)
  • 1/3 cup Asigo cheese
  • salt and freshly ground pepper to taste

Directions

Preheat the oven to 350 deg. F. Line a ridge baking pan with parchment paper.
Cut the zucchini in half lengthwise and place on the baking sheet. Drizzle on the olive oil and then spread it out using a silicon basting/pastry brush. Add salt and freshly ground pepper to taste.
Bake in the oven for about 15 minutes or until the zucchini is starting to soften. Remove the pan from the oven and then sprinkle the zucchini with the Asiago cheese. Put it back in the oven and continue to bake for another 5 minutes.
