Fried Asparagus

Fried Asparagus is a quick and delicious side vegetable.  This quick-cooking and waterless method will preserve the fabulous nutritional content of asparagus.

The asparagus stalk is tender to a certain point and then becomes tough and stringy.  Hold the asparagus halfway down the stalk and with the other hand, holding just up from the bottom, bend the stalk.  The stalk will break where the tender ends and tough begins.

 

Fried Asparagus

Serves 4

Ingredients

  • 1 Lb or 450 gm fresh asparagus
  • 2 Tbsp olive oil
  • salt and freshly ground pepper to taste
  • 1/4 cup grated Asiago cheese

Directions

Wash the asparagus. Then break off the tough end of the asparagus. On medium heat, heat 1 tbsp of olive oil in a frying pan. Add the spears and rotate them every couple of minutes to grill all sides. They should be tender crisp in 10 to 12 minutes.

Remove them to a serving dish. Drizzle with the remaining olive oil and add salt and pepper to taste. Sprinkle the Asiago cheese on top.
