Roasted Sweet Potato Wedges are a contrast of sweet and heat. They are coated with a combination of brown sugar, cayenne pepper and chili powder and then roasted.
Serve them with any grilled meat or with ham or a pork roast.
This year’s crop is now available at the Farmer’s Market, but the farmer I spoke with said that they are like a fine wine. They continue to age and sweeten over time. In fact, the potatoes he brought at the beginning of the market season, were last year’s crop.
