Saucy Brussel Sprouts

Saucy Brussel Sprouts are perfectly cooked brussels that are topped with a buttery mustard, onion and red wine sauce. 

For a creamier looking sauce, use regular cooking onions.  For a red sauce, use red cooking onions.

Saucy Brussel Sprouts

Ingredients

  • 20 - 25 brussel sprouts (outer leaves removed and an x cut into the base)
  • 1/4 cup butter
  • 1/4 cup finely chopped onion (about 1 small onion)
  • 1/8 Tsp white sugar
  • 1 Tbsp red wine
  • 2 Tbsp chopped fresh parsley (or 2 tsp of dried parsley)
  • 2 Tbsp Dijon or your favourite mustard
  • freshly ground pepper

Directions

Simmer the sprouts covered until just cooked (about 10 minutes).
While the sprouts are cooking, prepare the sauce by melting butter and saute the onion until soft but not brown.

Add the sugar, red wine, parsley, mustard and pepper. Stir to blend. Pour over cooked sprouts and serve immediately.
